10 Tips For The 2017 Solar Eclipse

Are you as excited as I am about the solar eclipse coming this Monday 21st? 

My glasses at the ready I have my place picked out, depending on the weather and I'm looking forward to a thrilling two minutes. 

Haha, it seems funny to put such effort into two minutes, but I really am looking forward to experiencing this eclipse! Have you looked at any of the photos that have been taken from past solar eclipse? They are beautiful! How Do You Want To Age?

Let's face it. Each day we are another day older. Time goes on and we can't do anything about that...or...can we? 

I say YES WE CAN!! 

Ok, I know I can't really stop time, but I do believe I can age much slower. It has been proven again and again for many years that we are what we eat. We have been shown how eating refined sugars will age us faster, I've read that consuming refined sugar rusts our body from the inside out!! YIKES! Now that's a visual that stuck with me. 

We have been hearing more about how processed foods are very low in the nutrition we need to stay vibrant and healthy. 

The outrageous intake of pop/cola in our diet blows my mind!! Why? Because as far as I can read on the label it has nothing real in it! Nothing from a whole food group. They are packed with sugar or sugar substitute. Now, don't get me wrong, I really like root beer, and ginger ale. I make it, yes make it! I use real sarsaparilla and sassafras in root beer, that's how it got...

Boring Salads No More!

The Same 'ol Same 'ol Salads...How Boring! 

No one really wants to eat the same salads week in and week out but we get into a rut a habit of what we choose to eat.  Even if you go out where they have a salad bar I bet you grab the same things to put on top of the lettuce. 

Salads are one of the easiest dishes to change up. You can make it a meal or a side dish. It can be sweet or savory or both! Lettuce holds its own with any kind of protein, meat, poultry or eggs. 

And now you can Grill IT! I know! This is awesome news. I have cooked and wilted my greens for years as well as eating them fresh however it's only been over the past few years that I've been grilling my salad. 

My daughter came out for dinner this week and asked for grilled romaine. As soon as she mentioned it my mouth started to water, yeah, it's that good!

Do You Feel Like You Are Always On The Go? 

Our culture is all about doing. Do this, do that, go here, now go there, get this done, don't forget about doing that...and on we go...

We aren't human doings we are human beings. It's OK to just be, to take a break from all of the days' doings. It's ok to take a day to rest, to sip a cup of tea and read a good book. 

My dad passed a couple of years ago and my mom feels alone, they were together 65 years and she has never been on her own so this has been a big adjustment. For me too because my parents have always been very active, involved and healthy people. Mom was born and raised in this town and dad was raised in the town across the river. It's is a beautiful little river town in West Virginia. It is a 4-hour drive from my home which takes a lot of time away from my 'doings'. 

I love my mom very much and want to be there for her while she makes this adjustment but I have a business to run and a growing family I want to...

Doesn't This Look Delicious? It Took Less Than 10 Minutes

Leftovers! It's Whats For Dinner! 

So you had some extra time on the weekend and grilled out! Everyone one loves a cookout. And you were thinking ahead for the weeks' dinners so you grilled extra. 

This is genius

When you do have time to cook make extra so you can grab that already cooked item and mix it with different ingredients for a whole new meal. That's what I did to make this chicken salad for my lunch. I grilled out several days ago and froze the extra chicken I had. Then before I went to bed last night I pulled out the frozen chicken breasts from last week and put them in the fridge to thaw overnight. 

Sunday is when I usually plan my meals for the week. I think about dinner of course, but I also think about lunch. I like to make my lunch. It saves a lot of money throughout the year and I know where my food is coming from so I feel better about what I'm eating

HATE Kitchen Clean-Up? I have some tricks!

I Am NOT A Fan Of Dirty Dishes!

My mom is an exceptional cook. She can make a gourmet meal out of beans! Her secret? I wish I knew...I have stood next to her while she told me exactly what to put in a dish and it still doesn't taste like hers!

And yet I have turned out to be a pretty good cook myself! 

One thing I chose not to do that my mom does is dirty every dish and pan in the kitchen when she cooks. The stove is a disaster! The counters are a mess, the wall around that area can get splashed on and the floor!! OH MY!!! 

Being the only girl in my home growing up it was my job to clean the kitchen after dinner....and I hated it!!! I hated it so much! As I was cleaning and wiping and scrubbing and mopping up after dinner I was coming up with ways to avoid the mess when I grew up and had my own home. 

And this is exactly what I did!! Good news! It turns out the foods tastes just as good with a clean kitchen. So my moms secret to a fabulous meal...being messy...

Salmon Recipe! Spicy Brown Mustard and Honey

There are as many ways to fix Salmon as you have ideas. 

It can be grilled, broiled, baked, fried and even served as sushi. If you are having it as sushi make sure when you buy it to ask that it's sushi grade. There is a difference. 

You can make a pesto, chutney, compote to put on top of it after it's cooked. You can marinate or just season it with good ole salt and pepper. 

My husband and daughters favorite way to make it is with cajun seasoning. I like it best with a drizzle of olive oil and a squirt or two of fresh lemon, with the lemon zest to top it off...yum yum... my mouth is watering just thinking about it. 

Salmon is great paired with all kinds of grains and vegetables and fruit! I know! it's a great food!

What The Heck Is Kombucha Tea?

I keep hearing about kombucha tea...but what the heck is it? 

"I am hearing about something called kombucha tea nearly everywhere I look these days but I don't know what it is and why I would or should drink it!"

This is a question I get asked on a regular basis in my Life Coaching Practice. 

"Here is my short answer; It's a probiotic drink that has been used over the centuries."

For those of you who really do want to know what it is read on... 

I have been drinking kombucha way before most people in the U.S.A. had ever heard of it. That's because I've been very fortunate to travel abroad and study with very knowledgeable folks and learn about how other cultures keep healthy.
