I'm sure you know salt is a flavor enhancer and black pepper adds a bit of heat and pep when added but did you know Himalayan salt is rich in iodine, calcium, and magnesium as well as other trace minerals. Black pepper is a digestive aid! Who knew?!

There are many H&S for each of the tastes we have. And there are several varieties of flavors from one herb or spice family. For instance paprika. You can get sweet, smoked or hot paprika. It is made from grinding sweet red pepper pods and then prepared differently to get the added flavor. It also depends on the region in which the red pepper is grown. Different areas of the world have different soil composition and therefore have a different taste.
I've read cumin has 32 different varieties! Cinnamon has 4 types that I know of. Cinnamon is packed with antioxidants that act as an anti-inflammatory. There is one type that is good for lowering A1C levels. (always check with a medical professional) It has anti-viral and anti-bacterial properties in it as well as other benefits. Cumin with 32 different types you can imagine has lots of things it assists with to keep our bodies running smoothly. I know it's good for our skin, and as a digestive aid because I've used it for both issues with good success. If you are interested in learning more about the health benefits of herbs and spices go to your library. There are several books out on the subject but like I said earlier make sure you know what you're doing before trying to fix or cure any health problem. Yes, these are daily additions to our food but using them for health is a whole different ballgame and needs to be monitored and respected.
One of my favorite places to go in the Columbus Ohio area to buy H&S is a store called Penzey. They have an online presence too, but I enjoy going to their store. It's set up like an apothecary where you can open the jars and experience they goodness inside them before you choose one to buy. The jars have suggestions on how to use the H&S which I like and on top of the shelves, they have recipes to take and try.
Good practices of use are to buy in small quantities until you know you'll use it up in a short amount of time. Yes, herbs and spices are dried and will sit in your cupboard for a long time without showing signs of going bad but they do. They will lose their healing properties and some flavor the longer they sit. Keep them in a cool dark place. I know many people store them over the stove but it my opinion it's not the best place for them. Hot air rises and well...you get my drift.
I hope you go out an buy at least one different spice to try during your next shopping trip or borrow one from a family member. One day I'll post a picture of my cabinet. It is full and I use them all!
