Too Many Easter Eggs? Make Egg Salad!

I enjoy everything about Easter. It's spring, many of us get pretty new clothes, there is always a lot of food, family, and fun!

We like coloring eggs with our girls. It's just fun being creative, getting our hands all stained with food coloring and then hiding them. But the best part for me is making egg salad with the ones that survive.

I have been making this delicious salad since I was a child. When we went on a family vacation mom always packed egg salad sandwiches for the car ride.  As I got older I was in charge of making this satisfying meal.

It can be the main course of a meal or a snack. If it's in my fridge I will not stay out of it. It's like I hear it calling me to take just one bite! LOL

I do not have a recipe...sorry... however here is my ingredient list.

1 doz hard boiled eggs (I have recently bought an egg cooker and I'm in love with it! I'll connect a link below)

minced green or sweet onion

celery

mustard

homemade mayo (it's really easy and so much better tasting and for you)

celery seed

S&P to taste

blend everything together, cover and let it sit for several hours or overnight in the refrigerator before eating. It's just better if you wait.

Julia Child mayonnaise recipe is the best.

 Enjoy!!!
