No one really wants to eat the same salads week in and week out but we get into a rut a habit of what we choose to eat. Even if you go out where they have a salad bar I bet you grab the same things to put on top of the lettuce.

My dad passed a couple of years ago and my mom feels alone, they were together 65 years and she has never been on her own so this has been a big adjustment. For me too because my parents have always been very active, involved, and healthy people. Mom was born and raised in this town and dad was raised in the town across the river. It's is a beautiful little river town in West Virginia. It is a 4-hour drive from my home which takes a lot of time away from my 'doings'.

So you had some extra time on the weekend and grilled out! Everyone loves a cookout. And you were thinking ahead for the weeks' dinners so you grilled extra.

When you do have time to cook make extra so you can grab that already cooked item and mix it with different ingredients for a whole new meal. That's what I did to make this chicken salad for my lunch. I grilled out several days ago and froze the extra chicken I had. Then before I went to bed last night I pulled out the frozen chicken breasts from last week and put them in the fridge to thaw overnight.
Sunday is when I usually plan my meals for the week. I think about dinner of course, but I also think about lunch. I like to make my lunch. It saves a lot of money throughout the year and I know where my food is coming from so I feel better about what I'm eating.

I fix a lot of chicken, it's probably the bulk of our meat intake. One reason I like to cook with it so much is it's easy to mix up so we don't get bored eating the same thing week after week.
My mom is an exceptional cook. She can make a gourmet meal out of beans! Her secret? I wish I knew...I have stood next to her while she told me exactly what to put in a dish and it still doesn't taste like hers!

It can be grilled, broiled, baked, fried, and even served as sushi. If you are having it as sushi make sure when you buy it to ask that it's sushi grade. There is a difference.
