There are so many things you can do with freshly made guac but the best part is how good it is for you!
Avocados have fiber, protein and healthy fats which are good for your heart and your brain. Then when you add garden fresh tomatoes, onions, garlic, lemon juice, and cilantro you have a complete meal! If you add a hot pepper you've just upped the game to help with inflammation.
I could go on but I'm sure your mouth is watering and you want my recipe. Remember to be creative, use the ingredients you like. Add pineapple or leave out the cilantro. It's your dinner make it your own!
yields enough for 2-4 people
2 fresh ripe avocados - smashed, I like leaving it a bit chunky
1 tablespoon onion - finely diced
1 clove garlic - smashed
2 garden fresh roma tomatoes - diced
1/2-1 teaspoon lemon juice - fresh squeezed
1/2 - 1 jalapeno - finely diced, depending on how hot the pepper is

Comparing yourself to another isn't a motivator...it's a stressor! And stress is a beast. That kind of stress doesn't care what it hurts or who it hurts. It just degrades your thoughts always pointing out what you could have done better, and how dumb you are for trying it 'that' way.

What we think creates emotions, it's not often we have a neutral emotion, meaning neither good or bad feeling about a thought. The thought may be very subtle but we will have a feeling about our thoughts.
This happens due to our survival as a species. The way our body works is still rooted in our fight or flight mechanism within our nervous systems. In order for our nervous system to receive any signal, we need to have an emotion, a vibration attached to it. This then allows our mind to choose...
A mighty wind blew night and day. It sole the oak tree's leaves away, Then snapped it's boughs and pulled its bark until the oak was tired and stark. But still the oak tree held its ground while other trees fell all around. The weary wind gave up and spoke, "How can you still be standing, Oak?" Especially now, try to remember that you are stronger than your loss and even though you are weathered and worn your strength is deep inside. Take this time to nurture and heal. You will come back even stronger then before.

We like coloring eggs with our girls. It's just fun being creative, getting our hands all stained with food coloring and then hiding them. But the best part for me is making egg salad with the ones that survive.
I have been making this delicious salad since I was a child. When we went on a family vacation mom always packed egg salad sandwiches for the car ride. As I got older I was in charge of making this satisfying meal.
It can be the main course of a meal or a snack. If it's in my fridge I will not stay out of it. It's like I hear it calling me to take just one bite! LOL
I do not have a recipe...sorry... however here is my ingredient list.

The salad was so fresh and flavorful, I grated fresh parmesan cheese on the broccoli and baked a ready to bake turkey tenderloin. It was so good I'm glad I have half of the tenderloin left over for another meal!
I wrapped the tenderloin in foil and closed it up tight. Then I lined a baking dish with another sheet of foil just in case it leaked, and it did so I'm glad I thought of that. Because I did this extra step I didn't have any clean-up from baking the turkey. Bake it at *325 for 45-50 minutes or until the internal temp reads *160. This is a very simple process and there is even a bonus in it for you. After you've selected your favorite cut of meat, ribeye would be mine, open a bottle of red wine. Blend a cup of the red wine with a 1/2 cup of olive oil. Boost the flavor without adding the calories by tossing in a spice or two. Place the meat in a glass dish and cover it. Put it in the fridge for at least 6 hours or you can leave it in overnight.
