It's me again with some surprising news! 

With the autumn season upon us and winter hanging out around the corner many of us will experience a change in the mood...and maybe not for the better. 

Some of this is directly related to SAD, seasonal affective disorder, but...some of it could be because we've been eating more sugary foods throughout the summer with cookouts and seasonal fruits in abundance not realizing how these foods throw off the microbiome of our digestive system. 

Said another way, eating too much sugar causes an imbalance of the bacteria in the gut. With more 'bad' yeast and bacteria it's harder for your digestive system to digest food properly. OH...and antibiotics kill the good bacteria along with the bad bacteria that cause illnesses...

Too Many Easter Eggs? Make Egg Salad!

I enjoy everything about Easter. It's spring, many of us get pretty new clothes, there is always a lot of food, family, and fun!

We like coloring eggs with our girls. It's just fun being creative, getting our hands all stained with food coloring and then hiding them. But the best part for me is making egg salad with the ones that survive. 

I have been making this delicious salad since I was a child. When we went on a family vacation mom always packed egg salad sandwiches for the car ride.  As I got older I was in charge of making this satisfying meal. 

It can be the main course of a meal or a snack. If it's in my fridge I will not stay out of it. It's like I hear it calling me to take just one bite! LOL 

I do not have a recipe...sorry... however here is my ingredient list. 

1 doz hard boiled eggs (I have recently bought an egg cooker and I'm in love with it! I'll connect a link below)

Delicious, Cheap, and Easy Dinner

How does a no fuss no muss meal sound to you that is will make your mouth water...

and have you wanting seconds? I can tell you I did have a second serving of everything on this plate! And...I don't feel even the slightest bit guilty. 

The salad was so fresh and flavorful, I grated fresh parmesan cheese on the broccoli and baked a ready to bake turkey tenderloin. It was so good I'm glad I have half of the tenderloin left over for another meal! 

 I wrapped the tenderloin in foil and closed it up tight. Then I lined a baking dish with another sheet of foil just in case it leaked, and it did so I'm glad I thought of that. Because I did this extra step I didn't have any clean-up from baking the turkey. Bake it at *325 for 45-50 minutes or until the internal temp reads *160. Remove it from the oven and loosen the foil while leaving it covered and let it rest for 10-15 minutes.

Why! does eating healthy have to be so complicated?!

Do we all need to get our education as a dietitian to understand how to eat healthier?

Eat this, don't eat that...geez... it makes my head spin and I'm fairly well versed in the healthy eating arena. 

The problem as I see it with almost all of the news reports we get today is fragmented information. The reporters only have so much time and space to share the info they've collected, or they are paid to sway us to a particular belief about any given subject (especially food ads) and we are left as the consumer to fill in the blanks. That is if we think there are any blanks to fill in! Sadly most of us take those bits and I mean bits of information and speak to them as Truth. If only deciphering the so-called facts about the food we eat was so easy.

Avoid Cancer Causing Carcinogens When Grilling Meat

Spring is coming, Spring is coming!

and many of us can't wait to get outside to grill up some delicious meals. Grilling is one of America's favorite ways to cook and if it keeps us at home for dinner then I'm all for it!

Except...there is some pretty solid evidence showing when cooking at a high temperature like on a grill it increases cancer-causing carcinogens.

The good news is I've learned how to reduce those bad boys up to 90%. Basically, you get to have your steak and eat it too! Can I get a collective high-five ^^

This is a very simple process and there is even a bonus in it for you. After you've selected your favorite cut of meat, ribeye would be mine, open a bottle of red wine. Blend a cup of red wine with a 1/2 cup of olive oil. Boost the flavor without adding the calories by tossing in a spice or two. Place the meat in a glass dish and cover it. Put it in the fridge for at least 6 hours or you can leave it in overnight.

Italian Chicken Recipe

I like cooking in the oven on these cold winter days. 

I looked at my weeks' schedule and realized it was going to be a tough week to cook full meals unless I planned for them. As I was looking over the Sunday grocery store ads so I could figure out this week's menu I heard on the news how cold it was going to be. That helped me narrow down what to cook, or at least how to cook.

Making dinner in the oven is wonderful for a couple of reasons. One, I am often chilly and walk around in the winter like the Stay Puft Marshmallow Man, all bundled up. When I have the oven on it warms up the house and I can remove my top layer for a couple of hours. The other reason is how good the house smells. The aromas of what is being baked fill the house and just have a comfortable effect for me.

2 Tips to Prevent Getting the Flu

Head this nasty flu off by implementing these two things!

We all know to wash our hands and wipe off all the handles around the house when someone has been sick, including the toilet handle. We've been told to eat more foods with Vitamin C and make a pot of fresh chicken soup. These are all great things to do.

One that I add to this list is to wash my hands after I've ordered from a menu when eating out. I always imagine someone who just coughed all over it or a snotty sticky child holding it. I know, gross. This has been something I've done for years, after ordering and handing the menus to the waiter I get up and thoroughly wash my hands before eating. I am also that person who wraps a napkin around the condiment bottle and shakers for the same reasons. 

I don't use antibacterial stuff other than the wipes at the grocery stores for the cart handles.  I think we need to be exposed to some germs to keep our immune system from sleeping on the job. Good 'of warm water and...

Gorgonzola and Pear Pasta~#mamaleesa style~

If you're tired of the same 'ole same 'ole boring dinner try this pasta meal

One of my biggest faults...I get bored very easily...routine is not my style and I especially get bored with eating the same foods. So I don't! I mix them up and try new things. My family never complained so I'm guessing they were ok with it. At least they were always thankful for a hot homecooked meal. This has also been a blessing because we have enjoyed many different foods and combinations of foods. 

My recent experiment was with ravioli. If you've followed me you know I like to shop at Aldi's. They are the brother of Trader Joe's. It is a no-frills shopping experience. Quick, Easy and Inexpensive! Another reason I like them is if you take time to look around you'll see interesting foods, some have become a staple in my cupboard.
